Tuotantomme ja viinikellari

Viinitarhojen pinta -ala on noin 50 hehtaaria, jotka sijaitsevat 250–300 metriä merenpinnan yläpuolella: suurin osa viinitarhoista on sangioveseja; kuitenkin on myös pieni osa ulkomaisia lajikkeita, kuten Merlot, Syrah ja Cabernet-Sauvignon.

Viljelijät käyttävät kehittyneitä viljely- ja viininvalmistustekniikoita, mutta noudattavat myös Toscanan perinteisiä kellarikäytäntöjä.

Viinitarhoja on äskettäin päivitetty uusien laatukriteerien mukaisesti: valitut kloonit on istutettu, istutustiheys on kasvanut ja tuotanto per kasvi on pienentynyt. Nämä muutokset on tehty viinin laadun parantamiseksi.

Meillä on kaksi vanhaa kellaria, jotka on todennäköisesti rakennettu vuoden 1000 jKr. Ympärille ja joiden kivet on otettu ympäröivältä maaseudulta. Tätä prosessia seuraa massojen valmistus ja viinin siirtäminen puupulloihin, joissa vanheneminen tapahtuu. Tuotanto voi olla yhteensä 260 000 pulloa, mikä vastaa noin 2 000 hehtolitraa.
